| Description: Large with a smooth, very pale green skin and sweet light-green flesh. Melons have a water content of about 94% and are digested very rapidly. It is therefore best to eat melons alone as digestion slows and fermentation occurs when melons are combined with other foods. Please do not cook. Eat in a fruit salad, juiced or by itself with a squeeze of lime. A good sourceof Potassium and negligible amount of fat. They are cooling foods which is probably why many love a melon in the summer.
